Annotation

The chemical composition of the wines is very diverse. It depends on the environmental conditions of grapes cultivation, variety and technological maturity of berries, and technology of primary and secondary wine-making. The most numerous group of grapes and wine compounds are aromatic substances, numbering more than 400 components. Depending on the quantitative predominance of different substances, the wine gets the predominant flavor. Substances in subthreshold concentrations are insensible, but in the combination with others they have a subtle bouquet. These substances can have an indirect effect the wine aroma according to a known synergistic effect. In order to study the aromatic complex and isolate the specific components of the wine aroma from Chardonnay clones grown in the Kuban region, we analyzed the long-term data of the volatile components of the wines from these clones in comparison with the prototype. The main groups of aromatic substances inherent in wines from studied clones are distinguished. The differences in aromatic wine composition from introduced Chardonnay clones and their prototype are founded. It has been established that the higher (aliphatic) alcohols predominate quantitatively in the aroma of the studied white dry wines from the Chardonnay grapes clones and constitute 53-60% of the total content of aromatic substances. Then the esters follows, which constitute up to 20 % of the amount of odorous substances. The sample from clone Chardonnay 95 was distinguished by the maximum accumulation of esters and higher alcohols. It had a fullness in taste, development of aroma and the highest tasting evaluation. At the same time, it recorded a low content of aliphatic acids 8 % below control.

Annotation

In recent years, the wine market was an increase in demand for red sparkling wines, and the quality of these wines depends on the origin row material. The grapes variety can obtain the high-quality products only under certain environmental conditions and in case of the use of farming practices that are most appropriate to the agric and biological features and the direction of the crop. It is therefore particularly important and relevant the careful selection of grapes varieties, the most promising with set of commercially valuable properties (yield, disease resistance, crop quality, etc.) and biological characteristics (adaptability and development stability under specific natural conditions), which are the raw materials for the quality winemaking. Breeders of AZESV&W (Anapa) created a whole new set of red grapes varieties, characterized by an increased resistance to diseases, pests, high productivity, early and very early ripening, and other positive qualities. Therefore, the current area of research is the study of grapes varieties of AZESV&W breeding to determine their technological orientation and to determine the possibility of their using for making of red sparkling wine. The article presents the results of study on the selection and justification of possibility of use of new varieties of AZESV&W breeding to produce the red sparkling wine. It was found that the grapes varieties of Cabernet AZES, Krasnostop AZES and Harmonia are not inferior to Cabernet Sauvignon and they can be used to produce the red sparkling sweet wines of high quality.

Management of soil fertility

Annotation

The soil factor, according to option of many leading native and foreign scientists, is of great importance for a grapes plant, and its influence is shown not only in harvest size, but substantially determines the quality of fresh grapes and products of its conversion, first of all wines. Analyzing the soil maps of the Krasnodar Region, it was noted that often the industrial orchards of vineyards of heterogeneous structure, and a small area can be several different soils, causing a various grapes growing conditions. In this connection, there was a need to study the impact of the specific soil conditions in the grapes plant, harvest and quality of wines. We have carried out a study of Merlot grapes in different soil types, located within the same area of vineyards, with the same agro-technical background and management system. It was found that an increasing in number of shoots and inflorescences, increases in the yield on brown forest soils and more intense growth processes of the Merlot grapes are formed. On black soil the grapes plant increase in plenty of bunches, the fruiting rates and fruitfulness, the sugar content and the acidity of berries is reduced. The research shows that ordinary black soil provides the higher quality of grapes and dry table wine material by increasing in the volume fraction of the ethanol and content of phenolic compounds, including anthocyanins. The carried out research results are of scientific interest for predicting of grapes and wine quality under the different soil conditions.
