Annotation

Food elements, including micro elements, play an important role in the life of grapes plants and they are an effective means of increasing of orchard yield and berrys quality. Industrial enterprises produce the new fertilizers that contain, besides the main nutrients, the complex of micro elements, that is necessary for the normal development of grapes plants. The novelty of our conducted research is to obtain the new data about regularity of not-root feedings impact on the quality and indexes of safety of wines from grapes grown in the Black Sea area of Krasnodar Region. The purpose of work was to reveal the impact of not-root feeding on the wine quality from Krasnostop Anapa grapes using the known methods of evaluation and also the techniques developed in the Research Center of winemaking of North Caucasian Regional Research Institute of Horticulture and Viticulture. The results of studying of the effect of four preparations of foliar activity on yield and quality characteristics of Krasnostop Anapa grapes are presented in the article. The grapes yield in years of research on the drug-treated Potassium Humate variant is higher than ones on the other fertilizers processed variants, an increase is ranging from 30 to 44 c/hectare. A positive effect of foliar fertilizers on the sugar content in the berry juice is revealed. The influence of these preparations on the quality of special wine is researched. During the years of research the grapes treatment of Nutrivant preparation was better others preparations.

Annotation

Climatic changes in the recent decades are global in nature and have a significant impact the processes occurring in the biosphere. Climate change is manifested in increased weather variability, an increase in the frequency and intensity of extreme weather events, such as floods, droughts, hurricanes, increased uneven precipitation, elevated temperatures, and increased air humidity. The article presents the results of a study of the influence of climate change in recent years the quality of white wine from the West European group under the conditions of Anapa terroir. It was shown that after 2017, the weather and climatic conditions of grape vegetation began to change significantly. The 2018 year was characterized as extremely hot and periodically dry with an extremely uneven distribution of precipitation. The technochemical and organoleptic analysis of wine samples from the 2018 harvest revealed the influence of changing weather conditions the quality of wines from white European grape varieties. Grape juice contains several hundred different phenolic substances, which affect the color, bitterness, astringency and other important indicators of wine. They determine the predisposition of the wine to oxidation, discoloration and atypical aging. The high content of phenols in the must of grapes from the 2018 harvest, combined with high sugar content and low acidity, contributed to the instability of the wine. The technochemical changes affected the level of spirituality, acidity of wines and the degree of accumulation of phenolic substances. According to organoleptic parameters, the quality of wines of most varieties in the experiment decreased by 0,26 -0,42 tasting points. In the organoleptic evaluation of the experimental wines of the 2018 harvest, a high alcohol content, a low degree of acidity and a heavy oily texture were noted.

Annotation

The development and production of products of treatment-and-prophylactic, diabetic and dietary direction are the strategic direction of the food industry in the most developed countries, this direction is the basis of health and activity of people. Medical and therapeutic properties of grapes and wine are known since ancient time, but for different reasons these properties are used a little in practice of health resort treatment. Among scientific developments of the Anapa's Experimental Station of Viticulture and Winemaking in this field it is possible to call five types of grapes kvass with original taste and tonic and medial properties; grapes treatment-and-prophylactic drinks with addition of natural herbal ingredients: "Morskoy briz" - the drink for treatment of upper respiratory tract; "Veta" - for treatment of gastrointestinal tract;"Krepish" - the drink is useful when various avitaminosis and metabolic disorder and as the all-strengthening means. The purpose of the research was study of possibility of expansion of enotherapeutic properties of wine by use of a steviozid. As a result of carried out research it is established that replacement of natural grapes sugars in the wines by steviozid is possible when we use almost all grapes varieties growing in the Black Sea zone, however steviozid is combined most harmoniously with the grapes varieties having an aroma of intense muscat or flower and also with high-extractive red varieties. It is established that steviazid concentration in a sugar equivalent shouldn't exceed 20 g/dm3 - for white semi-dry wines; 25 g/dm3 - for semi-dry red wines; 30 g/dm3 - for white semisweet; 35 g/dm3 - for semi-sweet red wines and 20-75 g/dm3 - for special sweet wines.
