Annotation

Composition and properties of pectin's depend on the mode of sedimentation. For optimization of technology of pectin electric sedimentation we studied the kinetics of electric coagulation of pectin macromolecules in the pulsed rotating electric field. A definition of the threshold of electric coagulation depending on the parameters of the electric field and other technological regimes. The following parameters were measured: the voltage on electrodes, the current density and pulse frequency of rotating electric field. It is established that the intensity of sedimentation process increases linearly when the current density increases. The threshold of electric coagulation depending on the pectin concentration in the solution is defined. The process of coagulation occurs the most intensively in the pectin extracts with above 1,5% concentration, this process occurs the least intensively if the concentration is 1.0%. The results of research showed that if the temperature of the initial model solution is higher, the velocity of coagulation is higher too. It is shown that the optimal temperature of solution is 23. It is established that the beginning of pectin coagulation in the solutions with its low concentration requires of creation of a higher field voltage and on the contrary. The kinetics of the process of electric flocculation is carried out. The results of study showed that the duration of the process of electric coagulation-flocculation of pectin substances is 60 minutes. It is established that pectin going out increases and reaches its maximum at the frequency of the pulses of rotating electric field of 25 kHz, then it begins to decrease. The use of the established regularities and technological modes permitted to receive the pectin with high ability to form the complexes. On the results of research the improved technology for the pectin production using on the phase of sedimentation the method of coagulation in the pulsed rotating electric field is developed.

Annotation

The article is devoted to the development of QMS process guidance "Corrective and preventive actions" for the LLC SIE "Mikrovinodelie", which is one from important governing processes of the quality management system. The actuality of the development connects with the need of accelerate development of small-sized high-tech enterprises for processing of agricultural production on the basis of creating for them of a favorable competitive environment. The process of prevention and correction of actions for the release of products conforming to the requirements of national and international standards is the basis of eliminating and preventing of actual or potential inconsistencies in products, processes and documentation and provides the confidence of enterprise in its efficiency and competitiveness. The methodological basis of the research is the principle of process approach to development of quality management system. The process algorithm of "The corrective and preventive actions" is developed and it is based on the prevention of inconsistencies in the quality of wine production and removing of their causes. The order of fulfillment of operations is described, the input and output requirements to the process with links to regulatory documents governing there execution are advanced, the criterions for assessment of quality of the execution of this process and the matrix of distribution of responsibility are elaborated.

Annotation

Fruit wine drinks, received from wild-growing and cultural plants are just as good as grapes wines on content of vitamins, micro elements and on physiological impact on a human organism. Fruits and berries of wild-growing and cultural plants are suitable for all types of processing. In the article the results of research of fruits and berries of wild-growing plants (actinidia arguta, dog-rose) and cultural plants (blackcurrant, raspberry) are presented. The studied fruits and berries were picked during the several seasons (2010-2012) in the South of Primorskiy Kray of the Far East region of Russia. The purpose of the performed work is to base the possibility of use of fruits and berries of wild-growing and cultural plants as a raw material for preparation of wine drinks. Physical and chemical and biochemical indicators and indicators of safety (the maintenance of toxic elements) of the studied raw materials were researched by the standard methods in the wine-making. It is known that the chemical composition of fruits and berries juice characterizes a nutrition value of product. It is established that the corresponding correction of juice of the studied fruits and berries, according to the indicators of mass concentration of sugars and titrate acids, gives the possibility of their use in the technology of fruit wine materials. The maintenance of toxic elements in the fruits and in the berries didn't exceed the admissible values established by TR TS 021/2011. It is shown that studied wild-growing (actinidia, dog-rose) and cultural (currant, raspberry) fruits and berries have an abnormally high content of biologically active substances, the original flavoring and other advantages that confirm the possibility of their use as the raw materials for wine-making.
