Annotation

At the first Russian wine-making forum, which took place in the autumn of 2022 in Moscow, much attention was paid to the use of autochthonous grape varieties for the production of high-quality wines. Dagestan is one of the regions of wide cultivation of grapes. Due to the presence of a large genetic potential of native varieties in the republic, it is possible to significantly increase the production of grapes for fresh consumption and use them as raw materials for processing on wine products. The experimental samples of dessert wines from grapes of autochthonous technical varieties Gimra Novaya and Fioletta, grown in the conditions of the southern viticultural plain zone at the Dagestan breeding experimental station of viticulture and vegetable growing of the branch of the FSBSI NCFSCHVW, were studied. Physico-chemical parameters were determined by standard methods used in enochemistry. The study of phenolic substances and vitamins was carried out using capillary electrophoresis on the device Kapel 104T, RF, NPF LUMEX. A higher content (in mg/dm3 ) of phenolic substances (4022,0), anthocyanins (213,0), ascorbic (72,52), chlorogenic (2,16), orotic (3,52), caffeic (14,35) and gallic acids (11,9) were found in wine from Gimra Novaya grapes, compared with wine from the Fioletta variety (the grape must of both prototypes was infused on the pulp for 24 hours). The total content of biologically active substances in the studied wines was 49,04 (Fioletta, infusion of grape must for 24 hours); 111,04 (Gimra Novaya, infusion of grape must for 24 hours) and 122,39 mg/dm3 (Fioletta, infusion of grape must for 24 hours). The infusion of the grape must on the pulp for 48 hours in wine from Fioletta grapes caused an increase in the total amount of these compounds by 2,5 times compared to the infusion of 24 hours. Dessert wines from the varieties Gimra Novaya and Fioletta were characterized by a clean, fresh varietal aroma, a long berry aftertaste with nuances of wild thorn and smoky prunes. The obtained results can be used in biotechnology in the manufacture of high-quality wines from autochthonous grape varieties.

Annotation

The results of studying the qualitative composition and quantitative content of amino acids, minerals and organic acids in the red varietal wine Cabernet Sauvignon depending on the climatic conditions of the grape growing region are presented. A comparative study showed that in wine obtained from grapes harvested in 2021, the total content of amino acids exceeds that of 2017 by 18 %, macronutrients by 19 %. Obviously, this was facilitated by a combination of a warm climate and twice the amount of precipitation in 2021. It was found that in both cases, the amino acid proline, which is poorly absorbed during fermentation, prevailed, which explains its quantitative advantage in wine, and potassium ions, which is a necessary factor of yeast growth. In the wine material of the 2021 harvest, the content of organic acids, which affect the extension of the shelf life, color stability, and the creation of a taste bouquet of wine, was studied. In quantitative terms, tartaric (53.66 %), malic (15.44 %), succinic (14.74 %) acids prevailed. The total content of phenolcarboxylic acids with antioxidant and bactericidal properties was 84.92 mg/l; among them, caffeic acid (59.95 %), which enhances and stabilizes the color of red wines, prevailed; gallic acid (0.95 %), which is part of grape tannins, was contained in the least amount in the studied wine. Ascorbic acid, used in production to prevent wine oxidation, was 16.74 %, nicotinic acid, which activates the process of alcoholic fermentation, was 6.39 %. The content of orotic and chlorogenic acids, which have an antioxidant effect, was 10.41 and 5.57 %, respectively. The combination of the amount of total precipitation and the sunshine intensity, which contribute to the accumulation of biologically valuable compounds in grapes, as well as the use of the active strain S. cerevisiae Y-4270 in biotechnology, influenced the formation of the organoleptic properties of wine, in particular, the berry aroma characteristic of the southern regions.

Annotation

Varietal characteristics and soil-ecological conditions, i.e. the place of growth, have the greatest influence on the quality indicators of grapes. For their widespread introduction into industrial viticulture, not only an agrobiological assessment is necessary, but also a technological one. In this regard, the purpose of the research was comprehensive study of wine materials from the distinguished grape varieties of the Anapa ampelographic collection. The conducted researches have revealed a number of promising red technical grape varieties with useful host-biological and technological features that are resistant to environmental factors. It has been established that AZESV&W breeding varieties (Merlot AZOS, Kubanets, Lazurnyi, Saturn, Krasnostop AZOS, Krasnostop anapskiy, Dostoynyi) accumulate in their composition a sufficient amount of sugars for the preparation of both table and liqueur wines. A large number of phenolic substances have been identified in their composition, which provide a stable color of wine during storage, and also have a high biological value due to the high accumulation of trans-resveratrol, vitamins and phenol-carboxylic acids. Wine materials from the studied grape varieties have excellent organoleptic properties, have a high tasting score and have been repeatedly awarded international and Russian wine competitions. Some of them suitable for being aged. Table red wines made from grape varieties of the AZESV&W breeding are not inferior to wine materials from the classic Cabernet Sauvignon variety in terms of the content of biologically active substances, organoleptic evaluation and are of high and stable quality. They are recommended for the production of high-quality tables, and in years favorable for sugar production and for the preparation of liqueur wines. Some wines made from varieties of AZESV&W breeding have been repeatedly awarded gold and silver medals at Russian and international tasting competitions.

Annotation

The grape industry is among the leading in the agro-industrial complex of Dagestan. In 2021, 219 thousand tons of grapes were harvested in the republic. About 70 % of the yield is raw materials for the production of alcoholic beverages. Autochthonous varieties are often used to produce high-quality wines along with introduced grape varieties. The chemical composition of wines is an important indicator of their taste, aroma and health benefits. The presence of amino acids, especially essential ones, in natural wines indicates their functional orientation. The purpose of the research is to determine the qualitative composition and quantitative content of amino acids in experimental samples of wine materials for dry wines made from the technical varieties of the grapes Gimra Novaya, Pervenets Magaracha and Fioletta, grown on the plain in the southern viticulture zone of Dagestan. The presence of amino acids was determined in four prototypes of red and pink wine materials using the capillary electrophoresis system "KAPYeL-105", OOO NPF LUMEX. The method of measuring the mass concentration of proteinogenic amino acids (MVI M 04-38-2004, St. Petersburg, 2004) was used. From 7 to 11 amino acids are identified, among which partially replaceable is arginine; conditionally indispensable tyrosine and essential valine, leucine, methionine, tryptophan, phenylalanine. A significant amount of the substituted amino acid proline was found in red wine material from the Gimra Novaya variety 145.3 mg/dm3 . Also, a significant amount of partially replaceable arginine was found in pink wine material from the Pervenets Magaracha and Fioletta varieties 3.9 mg/dm3 . The composition and concentrations of representatives of amino acid pools identified in new wine materials from grapes of the local breeding varieties Gimra Novaya and Fioletta, as well as the introduced variety of the Pervenets Magaracha, grown in terroir located on the Caspian plain of southern Dagestan, indicate that these wines are functional products. The use in optimal doses of table dry wines formed from these wine materials will be useful for normalizing the activities of various systems of the human body.

Annotation

This paper presents the results of agrobiological and uvological assessment of new grape varieties of breeding in Germany and Russia cultivated under the agro-ecological conditions of the Western Ciscaucasia. The studies were carried out using modern field research methods for viticulture in atypical weather c onditions in 2019. As an object of research, a grape variety of German origin Monarch and a domestic hybrid Gift of Dmitry, were used. These technical forms were selected for research as they are characterized by high biological indicators, and give a good harvest of grape berries even in adverse years for their cultivation. Also they have signs of resistance to biotic and abiotic stressors typical for the unstable and stressful climate of the Western Ciscaucasia. Under the unstable weather conditions of 2019, in the Black Sea zone, according to the main indicators of productivity, an agrobiological and uvological assessment of the introduced German Monarch variety and the domestic promising hybrid Dmitriy Podarok was carried out against the background of control of the domestic Saperavi Severny grape variety. The results of assessment carried out by us showed that the studied objects indicated high agrobiological indexes under stressful climatic conditions of Western Siscaucasia zone. For the same conditions, a uvological assessment of the bunches of the studied forms was carried out. The data obtained by us in the process of these research should be considered as preliminary data in relation to the atypical agroecological conditions of 2019. To get the deeper and well based conclusions, research in this field will be continued.
