Annotation

In the article the characteristic of grapes and wine-making branch of the Russian Federation is given, its social and economic importance is given. The historical retrospective of wine growing development in Russia is submitted. The main tendencies of branch development are established. The reasons of its stagnation and functional disproportions in the industrial wine growing are caused by negative macroeconomic tendencies; violations of the economic principles of the expanded reproduction organization and insufficiency of state regulation forms are based. The attention is focused on actual problems of branch development for import substitution. The analysis of world production of grapes and wine is carried out and the share of Russia in its structure is defined. The assessment of realization of state programs of development of grapes and wine-making branch with basis of need of increase in their resource providing is given. The need of development of domestic nursery for ensuring of increasing volume of plantings laying by high-quality landing material according to program tasks, including for import substitution is well founded. The achievements of outstanding scientists in the areas of biology, physiology, ampelografiya and enologiya are considered. The essential changes for the last decade in the domestic wine-making connected with replacement of all processing equipment and transition to new technologies are noted. Need of technologies modification on development of high-quality types of wine-making production to decrease in costs for production and safety of food products is well founded. The priority directions of scientific ensuring of wine growing and winemaking development considering solutions of actual scientific and practical tasks are defined. The purposes, tasks and subject of scientific ensuring of development of grapes and wine-making branch are formulated. The predicted technological changes in the branch on the nearest prospect and critical technologies for ensuring of its competitiveness are established.

Annotation

The task of the research was to examine and identify the vegetation characteristics of interspecific grapes hybrids in the year cycle of ontogenesis for their use in breeding and production. Comparative study of interspecific grapes varieties showed that in the year cycle of ontogenesis in the agrical and ecological conditions of the South of Russia the dates of the beginning and duration of phases of their vegetation have a wide range - from early to late timing of maturation. It is shown that the duration of the vegetation period of grapes plants closely based on the biological characteristics of the environment and temperature conditions of growth. On the basis of conducted research the grapes varieties with the shortest growing season (from 140 to 150 days) and with the longer period of growing (from 156 to 168 days) are revealed. It is established that the duration of the growing season varies from year to year in dependence of their reaction on the changing weather conditions. The December, Avgustin and Pervenets of Magarach grapes have the most stable period of vegetation. These varieties are the most resistant to changes under the environmental conditions of growth. The Vostorg, the Original and the Zory of Anapa grapes have the greatest range of variation in the duration of the growing season, depending on weather conditions. These varieties are the most sensitive to the changes under the environmental conditions of growth. The closest correlation of the growing season duration of the most studied grapes varieties is established from the average daily air temperature during the period from bud open to physiological maturity of berries. It is shown, that the correlation between the duration of growing period of grapes plants and sum of active air temperature are average and high.

Annotation

For a number of years at the Anapa's Zonal Experimental Station of wine growing and winemaking the breeding work was carried out to create the grapes varieties adapted for climatic conditions of cultivation and steady against diseases and wreckers, with high rates of productivity and quality of products. As a donor of stability to mildew and to a frost the Kriulyanskiy grapes of the Moldavian breeding was used. As a donor of quality and early ripeness the Cardinal grapes was used. The purpose of crossing of these grapes varieties were the receiving of new high-quality grapes varieties with the beautiful appearance and the increased resistance to fungal diseases and a frost, with high tastes quality and early term of ripening. As the result of the research conducted by us the 16 perspective forms were received after crossing. Morphological, agrobiological and phenological study of the selected forms was carried out using the classic methods accepted in the viticulture. As a result of the long-term hybridological analysis the hybrid forms were selected, and studied, and reproduced by vegetative way; these forms have a beautiful appearance of berries and bunches, a high crop and a high quality of production, like on the level of the European control grapes varieties. Further these forms are received the names of the following varieties: Cardinal Anapa, Lunny, Taman, Zori of Anapa and Prikubanskiy. It is indicated that the selected perspective grapes varieties of table direction can be used in the further breeding and genetic research. These grapes varieties can be the donors of such valuable qualities, as the resistance to frosts, the elegant appearance of bunches and berries, immunity to mildew, productivity and quality of production, and that is important when it is necessary to create the new grapes varieties.

Annotation

In the modern wine growing for fight against a root phylloxera an inoculation of European-Asian grapes varieties on rootstocks steady against this wrecker is using. In this article the information is presented what types of rootstocks of domestic and foreign breeding are used in the modern branch of wine growing. The area of their use is described, the useful properties of rootstocks and their demerits are described. The purpose of this work is creating of new grapes rootstocks which wouldn't have the merits of existing rootstocks. The short description of the grapes rootstocks of breeding of the Anapa's Zonal Experimental Station of wine growing and winemaking as AZOS-1, AZOS-2, AZOS-3, AZOS-4, AZOS-5 and AZOS-6 is given in the article. It is indicated that these rootstocks have a high resistance to a leaf form of phylloxera, to chlorosis and to some other diseases of a grapes bush. They have the short period of vegetation, a high quantity of standard cutting from hectare and other useful properties. In the article the description of a new formation of rootstocks grapes bushes of "AOS-1" with a free trail shoots is given. This construction of grapes bush is developed by the Anapa's Zonal Experimental Station of wine growing and winemaking. It is also given all advantages of this forming in comparison with other designs of grapes bushes. It is especially noted that use of this forming of bushes increases the productivity per men in the process of bushes scrap and preparation of cutting; the expenditures on the struggle against diseases and wreckers on the vineyards are reduced; the quantity standard of grapes cutting increases by 27-33%.

Annotation

The European grapes varieties making the main source of raw materials of our wine-making have a number of qualitative merits in the ready wines, but they also have the demerits in productivity and resistance under our climatic conditions of cultivation. For a laying of new plantings of white grapes varieties the old assortment is used, which in the extreme winters of 2005-2006 was heavy damaged. The purpose of our research is study of physical and chemical and biochemical composition of wine materials and wines from perspective grapes varieties. Their characteristic on the main estimated indicators will allow to create the whole series of new qualitative wines. The results of long-term study of new high-adaptive grapes varieties are presented in this article. The research is carried out at the Anapa's Experimental Zonal Station of Wine growing and Winemaking for the period from 2001 to 2013, the research allowed to reveal a number of perspective white technical varieties which are resistant to adverse ecological factors of environment and capable to give the high-quality wines. On the basis of organoleptic properties the wine materials from grapes Varvarovskiy, Zolotaya Osen, Bokator (7,85 points); AZOS Riesling (7,83 points); Arabushlo (7,8 points) and Aligote's control (7,78 points) were recognized as the best samples. On physical and chemical indicators all studied wine materials are corresponded to requirements of GOST. On total accumulation of biologically active agents the wine material from grapes of Mtsvane Kakhetinskiy (47,6 mg/dm3) was selected. Based on the results of the long-term research carried out by us the conclusion is made that the selected grapes varieties should be allowed for use in the industrial application and also for widely use in the breeding work as donors of frost resistance, drought resistance and wine quality that will expand the borders of steady grapes production in the region.

Annotation

The water erosion annually causes a big losses to farmlands throughout the world. An erosion control of soils is one of the major national problem in the system of the measures directed on preservation and transformation of a landscape. The main factors of erosion development are: climatic, topographical, geological, soil, biological and the level of human economic activity. Soil erosion at the vineyards is one of priority problems in the modern wine growing. The purpose of the research conducted by us is to study the development of a water soil erosion in the vineyards. The object of our research is the vineyard soils affected by water erosion. The methods of research using in a work: the route and field inspections, the laboratory study of water and physical properties of the soil. The description of the major factors causing the development of water soil erosion in the vineyards is given in this article. It is noted that soils of easy structure with low content of organic substance are more exposed to a water erosion. It is also established that the water erosion can be manifestated on slopes, from 1. The negative influence of system of soil maintenance of vineyards as black steam is shown and scientifically based. The ways of decrease in the mechanical soil load and the prevention of development of soil degradation processes in the vineyards are offered. It is indicated that the laying of vineyards needs research for assessment of soil potential of plots; it is necessary to plan of a plot to neutralize the microheights and low places that will prevent the further development of a water erosion. The most effective method of control of a soil erosion is use of a grass cover that almost completely prevents the development of erosion processes.

Annotation

In the Krasnodar Region, in a view of the intensified development of production of table and technical grapes varieties in the country farms, the question of creation of small-sized and hi-tech enterprises producing the high-quality competitive wines controlled according to the name and a geographical origin is actual. That the small enterprise will become rather competitive, it needs to introduce in the production the full-fledged optimized system of quality management (SMQ). The problem arising during forming of SMQ at a small enterprise is the definition of conditions of production and check of products quality. For ensuring of compliance of quality management system to requirements of normative documents it is necessary to create the system of monitoring and measurement of technological and organizational processes and the indicators of production quality. These questions are answered by a complex of the processes connected with control, measurement, analysis and improvement of production and processes. This article is devoted to development of the guide to process "Monitoring and measures of production and processes" for the small innovative enterprise "Mikrovinodeliye". The main purpose of this guide is the control and measurement of the current values of quality and safety of the wine-making production and the technological processes and the efficiency of function of quality management system as a whole. The algorithm of process is developed, its place in the quality management system is shown, the input and output requirements to process with links to normative documentation are adduced. The criterions of an assessment of quality of this process and a matrix of distribution of responsibility are developed. The system fulfillment of operations offered in the developed guide will allow to provide the stable growth of the small innovative enterprise on the basis of output of competitive wine-making production irrespective of change of external conditions of the environment.

Annotation

The quality of wines, including the wines of protected geographical indications and the protected names of origin place is defined by diverse of agrobiological, soil and climatic, agric and technical, technological and other factors. All of these factors form the quality indicators of wine at the various stages of wine-making production. Especially strict requirements, concerning both stability of chemical composition, and agric technology of grapes cultivation, used in the technology of wine production are imposed to wines of the protected geographical indicators and the protected names of origin place. In this work the results of research of chemical composition of wines of geographical names received from the Cabernet Sauvignon grapes of agricultural firms of "Myskhako", "Fanagoriya", "Kuban Vine" and liqueur wines are presented. The work purpose is the establishment of distinctions in a chemical composition of finished production taking into account the identity of technology. The methods of definition of wine chemical composition are the existing national standards of the Russian Federation and the methods on the basis of a capillary electrophoresis, a gas-liquid chromatography, nuclear absorption spectroscopy and infrared spectrometry. As a result of our research the new information on biochemical composition of table and liqueur wines, including the wines of protected geographical indicators and the protected names of a place of an origin, depending on zone conditions of grapes cultivation are received. The distinctions in the content of phenolic substances, separate groups of polyphenols, biologically active agents and antioxidant activity are revealed at close composition of wine, identical technology and on the same equipment. The data received as a result of carried out research testify about influence of agric technical conditions, and also natural and soil factors of cultivation zone on a chemical composition of produced wines.

Annotation

Quality of sparkling wines and the Russian champagne always has to conform to requirements of standard documentation on physical and chemical, organoleptic indicators and indicators of safety. Sparkling wines and the Russian champagne have to possess a good foaming. Another important requirement to this group of white wines is the existence and long preservation of light-straw or straw color, without manifestation of tones of oxidation in color and taste. However, not all production of the domestic enterprises making the sparkling wines and the Russian champagne meet these requirements. The purpose of our work is to estimate the physical and chemical indicators of the wines produced by the enterprises of the Russian Federation. As objects of research the samples of the wines, supersaturated by carbon dioxide and acquired in a trade network and at the enterprises of Krasnodar Region are used. The organoleptic assessment of wines was carried out according to GOST 32051-2013. Carbon dioxide pressure in a bottle was measured in accordance with GOST 12258-79. The indicator of foam-forming ability (F) was defined using device of Z.N. Nemtsova. Other indicators of foam properties are estimated by means of the Mosalux device. Organoleptic indicators of the sparkling and champagne wines produced by the enterprises of Russia are presented in this article, the indicators of sparkling and foam properties of wines are defined. The monitoring of quality of white sparkling wines and the Russian champagne, which is carried out by us, showed that not all production corresponds to above-mentioned criterions of quality. The dispersion of indicators of foam properties speaks about instability of quality of domestic wines. It is shown that the reasons of it is the quality of initial table wine materials and technological methods of processing of wine materials and race of yeast and condition of secondary fermentation.

Annotation

The purpose of the work is to carry out the analysis of the dimness of wine-making production and to identify the reason of dumness and to determine the composition of sediments of the dim wines. The dry, medium dry and semisweet white and red table wines, special and liqueur wines, produced by the enterprises of Krasnodar Region are used as the subjects of study. The analytical methods - microbiological, spectral, chromatomass-spectrometry are used in the work. The composition of sediment was defined with use of colors and by means of method developed by author. The electrocinetic potential of sediments was determined by means of method of electrophoresis. In the result of study it is established that wines still remain unstable against the colloidal and crystall dimness. In is shown that crystal, colloidal and biological (less degree) dimness are characteristics of table wines. In the composition of sediments the microorganisms - wild and wine yeast, acetic and lactic acid bacteria, and also proteins, polysaccharides, the cations of metals are identified and the phenol substances are identified in the red wines. The cations of sodium, lipids, proteins and phenol substances giving the specific color to crystals are found (in considerably smaller quantities) in the crystal precipitates, besides calcium and potassium cations. It is established by means of analysis of colloidal sediments that in the last 10 years the correlation between the basic high molecular substances of sediments changed to protein fraction, especially in the special (now liqueur) wines. A quantity of difficult removed proteins and their complexes with polysaccharides are increased. For the first time the presence of sulfur, including bisulfite derivatives is discovered in the composition of colloidal sediments. It is noted that the quantity of dimness in the high-quality wines were decreased in comparison with 2002, it can't be told about production of mass demand, especially about semisweet wines.

Annotation

The modern concept of stable grapes production is based on the strategy of formation of steady agric cenosis with use of biotic and abiotic potential of high-adaptive varieties. The main harmful organisms in the vineyards of the South of Russia are mildew, anthranose, a bacterial cancer and others. At the defeat process of plants they break their growth processes, reduce the biological and economical efficiency and reduce the operation term of grapes plantings. Therefore there is the high need for grapes varieties steady against biotic and abiotic factors of environment. The purpose of this work is selection of genotypes steady against chronic diseases for use in breeding and industrial production. Research of influence of a phytosanitary condition of vineyards on growth and fruitage of V. Vinifera grapes varieties of different origin groups is carried out in the agric and ecological conditions of the Black Sea zone of wine growing (Anapa). The objects of study five groups of grapes varieties of different ecological and geographical origin are used. The monitoring of phytosanitary status of grapes plants during their vegetation is carried out using the methods of estimation of grapes varieties resistance to the dominant harmful organisms. It is established that under abnormal weather conditions the greatest resistance to a bacterial cancer and an infectious chlorosis have the intraspecific hybrids; next in the decreasing order the Convar orientalis Negr follow. (East Asian), Convar pontica Negr. (coasts of the Black Sea), Convar occidentalis Negr. (West European) are followed. The variation of degree of varieties resistance to harmful organisms is also observed within each group. It is shown that the level of productivity of grapes bushes is in the close negative dependence from degree of plants defeat by mildew.

Annotation

The content of free amino acids in the wines is closely connected with their quality, technology of their preparing and as a result - with their nature. However the attempts undertaken earlier to define interrelation between the content of free amino acids and authenticity of wines have led to inconsistent results. Improvement of analytical techniques of definition of an arginin, proline, treonin in the fruits, juice and natural wines by means of a capillary electrophoresis is the actual and timely task. The complexity of biochemical composition of fruits, grapes and products of their processing, in particular of grapes wines is discussed in this article. The composition of grapes wines differs in the considerable variety of components reaching 800. The existing problems of control of quality and natural composition of wines, in particular of definition of amino acids content are estimated at them. As a result of systematic of the analysis conditions the methodical approach to definition of amino acids in the products of fruits and grapes processing with use of a capillary electrophoresis is offered. In the course of carrying out of experiment the optimal composition of the electrolyte solution for the separation of model mix of amino acids and their definition in the studied samples is chosen. The time of migration of the interesting component, the observed mobility of an ionic form of substances and other parameters were used as the main criterions of an assessment of the analysis quality. The optimization of analysis modes taking into account the influence on the separation of other substances of studied objects is executed. Statistical processing of the data obtained in the experiments allowed to establish a variation of mass concentration of proline which for natural white wines changes within 400-1000 mg/dm3, and for natural red wines it changes from 600 to 2000 mg/dm3. These indicators for the raw materials can be a little expanded.

Annotation

The purpose of our study is to clarify the harmfulness of root and leaf forms of phylloxera; to define the resistance of zoned and perspective grapes varieties to the leaf form of phylloxera; to identify the main actions in the fight against quarantine vermin. The research are carried out in the collection planting of Krasnodar Region using the phytosanitary monitoring of vineyards. To assess the resistance of varieties to harmful organisms the domestic scale is used, it is more convenient for modeling of grapes protection systems against vermin and pathogens. The results of long-term inspections of vineyards in the Krasnodar Region is presented in the article. The field resistance of zoned and perspective grapes varieties to a leaf form of phylloxera is shown and the preparations for protection of plants against this vermin form are estimated. It is established, that resistance of zoned and perspective grapes varieties to a leaf form of phylloxera is determined not only by the morphological and physiological features of varieties, but also by the degree of bushes by vermin colonization, that causes the spreading of vermin on the varieties previously, considered as resistant. It is noted, that therefore it is inexpedient in one planting to select the grapes varieties with different resistance to leaf form of phylloxera. The principle of selection of varieties in one planting is the data of ripening and uniform protection of plantings against harmful organisms. It is noted, that an assortment of preparation to fight against a leaf form of phylloxera is small now. The preparations approved for use against a quarantine vermin have the high toxicity and adverse influence on the useful fauna. Therefore the laying of new vineyards needs planting material free from a root form of phylloxera.
