Annotation

The study and generalization of world experience in research on the development of technologies to reduce losses, stabilize the quality and maximize the preservation of biologically active substances of crop products during storage, made it possible to conclude that research on the methodology for the application of electromagnetic fields of extremely low frequencies (EMF ELF) is relevant. to control the development of pathogenic microflora, leading to the development of diseases and, as a consequence, the loss of crop production. During the study, the composition of the microflora of strawberries was studied, it was found that the amount of mesophilic aerobic and optionally anaerobic microorganisms (MAaOAM) on the berries of the strawberry variety Marmalade, the harvest of 2019, ranged from 5000 CFU/g to 12000 CFU/g. MAaOAM are mainly represented by spore microorganisms, enterobacteria and yeast. The number of molds is from 110 CFU/g to 1400 CFU/g. The influence of EMF treatment by electromagnetic fields on the pathogens of strawberry fungal nature was investigated. In the samples treated with EMF ELF, in comparison with the control sample, the number of microorganisms after 14 days of storage was lower. The regularities of the influence of the EMF ELF processing parameters on the development of pathogenic microorganisms of strawberries in experiments and in vivo were revealed. It was established that the processing of strawberries of the variety Marmelada using ELF EMF with parameters: frequency 30 Hz, current strength 10. A, processing time 30 minutes has the maximum inhibitory effect on the development of phytopathogenic microorganisms Botrytis cinerea and Rhizopus nigricans.

Annotation

The problem of storing fruits and vegetables and preserving their sensory and nutritional qualities is actual nowadays. It is extremely important to find such a technology for preserving fresh fruits and vegetables and with the use of which all the components of their chemical composition remain at a high level for the longest time in terms of their content and do not undergo significant changes, biological activity and safety. To ensure stabilization of commercial quality, maximum preservation of biologically active substances and reduction of losses during storage of berry raw materials, various technologies are used such as controlled gas environment, treatment with chemical reagents, microbiological preparations, the use of various physical factors. A comparative analysis of the growth dynamics of the populations of the fungal pathogens Botrytis cinerea and Rhizopus stolonifer was carried out depending on the parameters of their treatment with ELF EMF. The regularities of the influence of the ELF EMF processing parameters on the development of pathogenic microorganisms of strawberries in experiments and in vitro were revealed. It was established that in the experimental sample Botrytis cinerea treated with ELF EMF with parameters of 30 Hz, 10 A, 30 minutes, the number of colonies grown after 7 days was 1.8 × 102 CFU, which is 27.5% lower compared to the references. In the experimental sample of Rhizopus stolonifer treated with ELF EMF with parameters of 30 Hz, 10 A, 30 minutes, the number of colonies grown after 7 days was 2 × 102 CFU, which is 26.2% lower compared to the references. An analysis of the data obtained in vitro experiments allows us to conclude that the variant of processing ELF EMF with parameters of 30 Hz, 10 A, 30 minutes most effectively affects the inhibition of the growth rate of the fungal pathogens Botrytis cinerea and Rhizopus stolonifer, which cause diseases of strawberry berries.

Annotation

One of the most important vegetable crops in Russia is cabbage, which includes a number of varieties, including cauliflower. The content of vitamin C, carbohydrates, proteins, acids and minerals in cabbage determines its value as a food product. Currently, one of the areas of research aimed at developing new effective, economical and environmentally friendly echnologies for storing vegetable juicy raw materials is the use of various types of physical treatment, including electromagnetic fields. This article presents the results of studying the influence of extremely low frequency electromagnetic fields the content of water, fiber, soluble carbohydrates (sugars and starch), protein and vitamin C in the cauliflower cultivar of Ardent during storage. The objects of research were treated with an electromagnetic field (25 Hz, 10mT, 30 min) in a laboratory experimental setup and were stored for three weeks at a temperature of 41 º and air relative humidity of 753 %. It was found that, in comparison with the control, the ELF EMF treatment of cauliflower leads to a slightly more active loss of water, and is also ccompanied by a decrease in the mass fraction of cellulose by an average of 5.3 % and an increase in the mass fraction of soluble carbohydrates by 18.1 %, protein by 4.6 % and vitamin C by 14.4 % during storage. The study of the regularities of the influence of the treatment of vegetable juicy raw materials with electromagnetic fields of extremely low frequencies on the biochemical composition can make it possible to develop new storage methods.

Annotation

Grapes are a seasonal crop, and their consumption in fresh form is limited to two or three months. Extension of the period of consumption is possible by careful selection of yielding and genotypically stable varieties, the set of which would ensure an equal arrival of products in trade and processing enterprises, as well as by forming a rational logistical system of transportation and storage, which allows to prolong the storage period of grapes. To date, there are a number of technologies for grape storage, allowing to minimize the value of losses, as well as to prolong the period of storage. However, not all methods are safe for human health and their effectiveness cannot be justified. Proceeding from this, the aim of the research is to develop storage technology for table grapes, allowing to extend the storage period, using biotechnological methods, safe for human health. On the basis of the analysis of scientific and technical information sources, it was established that a promising direction is the development of storage technology with the use of film-forming films and coatings. On the basis of organoleptic biochemical, physico-chemical and microbiological studies the technology of table grapes storage with the use of film-forming coatings based on starch and gelatin and based on chitosan and sodium alginate has been developed. It has been established that storage of grapes with film-forming coatings in accordance with the developed technology has a positive effect on grape yield and reduces the value of total losses. The best indices, irrespective of the composition of the film-forming coating, showed the samples treated at the rate of 100 ml per 1000 grams of berries. The yield of marketable grapes when using the coating based on starch and gelatin increased by 29.6 %, the yield of grapes based on chitosan and alginate increased by 25.7 %.

Annotation

The use of fresh fruits and vegetables in food is an integral part of a balanced human diet. The current trend towards a healthy lifestyle and taking care of one's health creates a high consumer demand for high-quality fresh fruits and vegetables. In recent years, in connection with global environmental problems, such as heavy air and water pollution, the agricultural industry has been faced with big problems of growing and post-harvest conservation of fruits and vegetables. A pressing problem is the storage of fruits and vegetables and the preservation of their sensory and nutritional qualities. It is extremely important to find such a technology for preserving fresh fruits and vegetables, when used, all components of their chemical composition as long as possible remain at a high level in content and do not undergo significant changes in quality indicators, biological activity and safety. The development of new technologies for the preservation of quality and the extension of the shelf life of fresh agricultural products is particularly important due to global environmental changes. The article discusses modern physical, chemical and biological studies that describe new ways to extend the shelf life of fresh fruits and vegetables.
