The comparative evaluation of technical parameters and chemical composition of 12 persimmon varieties is presented. Perspective varieties with maximum accumulation of biologically active substances, which should be recommended for fresh consumption and canning functional purpose are selected. Annotation

Estimation of 9 feihoa varieties and 12 persimmon varieties growing in the conditions of Abkhazia, on the content in fruits soluble solids, sugars, organic acids, vitamins, polyphenols, amino acids, pectin and minerals is given. Varieties sources of high content of biologically active substances for obtaining of high quality canned products are allocated. The estimation of quality of canned foods with persimmon and feihoa use is given.
