The change of amino acid composition in the process of fermentation of tirage mixture was studied. A comparative assessment of influence of minerals from various deposits on the intensity of consumption of amino acids in the secondary fermentation is given. It is established that the amino acid composition of cuvee depends from many factors such as the accumulation of yeast biomass, a rate of sugar consumption, oxygen, nutrients of tirage mixture, used minerals and it affects the quality of sparkling wines.
The possibilities of definition by chromatographic methods of toxic pesticide residues, using a long time in the vineyards of the southern region of the Russian Federation are presented. It explains their accumulation in the soil, and so in grapes and wine-making products. The use of gas and liquid chromatography allows with high sensitivity to determine their toxic metabolites with original preparations
Possibilities and new methodical approaches of the analysis of wine production by means of capillary electrophoresis and gas chromatography are considered. The current Standards, providing control in wines of organic acids, dyes and preservatives are discussed. Methodical decisions for definition of glucose, fructose, sucrose and general phosphorus in wine production are offered by method of capillary electrophoresis

The results of experimental study on the content of insecticides DDT and HCCH in the agricultural production are presented in the article. The special features of the presence in the tests of metabolites DDT and isomers of HCCH are indicated
